I love mornings & Espresso Pancakes

I love mornings.

Breakfast is my favourite meal of the day, to the point that I plan what I will eat for breakfast the night before. I went to bed dreaming about fluffy pancakes. Oh yeah.

They are so easy to make; just throw some natural ingredients in a bowl, mix well & prepare them in a pan with coconut oil. Do not worry too much about quantities; just add in whatever you feel like until you’ve reached a thick batter consistency.

I added Bareblends Organic Vanilla WPI to boost my metabolism. These pancakes are perfect for a nutritious post work out breakfast as they are gluten free, low carb and contain no processed sugar. Believe me it’s a winner.

Espresso Pancakes

πŸ“Œ 1/4 c almond meal
πŸ“Œ 1 serve Bare Blends organic vanilla bean wpi
πŸ“Œ 1 shot Colombian coffee
πŸ“Œ 1 egg
πŸ“Œ 1/4 tsp baking powder
πŸ“Œ vanilla (optional)

Blend all ingredients together & cook up pancakes. Serve with strawberries, granola for that crunch factor & whipped coconut cream.
