If you have followed my Insta-stories @nenapiki_healthymeals then you know I was craving these bad boys. Yep, I’m talking about the fluffiest and yummiest of pancakes of all times. These happen to be gluten and dairy free. Additionally, they are really low in sugar and really good for your gut. Not convinced yet? Let’s give them a try. Recipe makes one serve but you can easily double up if need to.
1/4 cup Buckwheat flour
1 tbsp Chia seeds
1/2 small Banana
Dash almond milk
Mash the banana in a bowl. Then add all the remaining ingredients. Heat a small pan with coconut oil and add ¼ cup of the pancake batter. When bubbles start to appear, flip over and cook for a further minute. Repeat this process until all batter is used.
Serve with blueberries and coconut yoghurt. Try adding some crunch like my homemade granola.

Note: You can make this a paleo dish by using any nut meal instead of buckwheat flour. Almond meal is a good substitute if you have in on hand.
